Welcome to Gluten-free Warrior

Gluten-free Warrior is a consulting company based in Philadelphia. The company originated as the whole foods cookbook, Gluten-free Warrior, and now provides culinary education, nutritional counseling, catering, personal cheffing and consulting to food industry professionals. Genevieve Sherrow, Founder of GFW, holds a Master of Science in Nutrition from Bastyr University, one of the world's leading centers in the natural health sciences. She has been living gluten-free for 6 years and uses a whole foods approach to gluten-free cooking and focuses on foods that are naturally gluten-free, nutritionally strong and delicious! Genevieve has taught cooking classes at Whole Foods Market, La Cucina at the Reading Terminal Market, COOK, the Mount Airy Learning Tree and Essene Natural Foods Market. Culinary and Nutrition Education Programming

Welcome to GF Warrior's Culinary Education Program! Our classes are informative, inspiring and fun! We teach you how to prepare tasty, delicious and nutritious GF meals the whole foods way. Our food and teaching style has been described as accessible, substantial, wholesome and dynamic. We use high quality, certified organic, local whole food ingredients. Classes are suitable for individuals with celiac disease, non-celiac gluten intolerance, those adopting gluten-free diets for any health concern or those with a general interest in whole foods cooking.

All classes are approximately 2 hours in length, but can be modified based on your venue and participants' needs. We teach in a variety of venues including grocery stores, health care institutions, schools, restaurants, private homes, parties and conferences. Getting Started Series
Quick and Easy: This is a basic GF cooking class that discusses GF staple dishes that you can prepare in less than 30 minutes. Class also emphasizes planning for leftovers. We’ll prepare Habana Rice and Beans, Thai Chili Lime Chicken and Leek and Shittake Mushroom Frittata.

On a Dime: GF diets can be costly. Relying on whole foods such as bulk grains and legumes, fruits and vegetables can be your best bet when designing budget conscious, nutritious meals. We’ll make satisfying whole foods meals for under $20 including: Eat the Rainbow Veggie Chili, Chickpea Vegetable Curry and Stir-fry of Carrot, Celery, Zucchini and Mushroom with Toasted Millet Salad. Vegetarian, no eggs or dairy.

Whole Grains:
GF whole grains can pack significant nutrition into your diet. Learn how to cook with nutritionally strong gluten-free whole grains such as quinoa, millet and buckwheat for breakfast, lunch and dinner. Cheesy Polenta Triangles, Confetti Quinoa with Nori, Sesame and Raw Cashews, Toasted Buckwheat with Rainbow Root Vegetables.

Brunch: Brunch is an ideal time to nourish, relax and cook! In this class we’ll make nourishing whole grain breakfast dishes that are sure to jump start your day. Nutty Millet Porridge with Seasonal Peaches, The Blue-est Corn Cakes, Hearty Buckwheat Waffles, Scallion, Walnut and Nori Scramble.

On the Go: Finding healthy gluten-free food on the go can be challenging, especially when traveling. In this fun and informative class, you’ll learn how to create tasty, nutritious and portable breakfasts and snacks: Pumpkin Spice Bars, Carrot Raisin Breakfast Muffins, Triple Nut Granola Bars and Quinoa Breakfast Cookies.

Family Breakfast

For Children Ages 7-9. We know that breakfast is the most important meal of the day and it can be the most challenging for those on a gluten-free diet. In this class you and your child will learn how to prepare tasty and delicious morning dishes such as: Banana Berry Muffins, Individual Veggie Frittatas (which children can customize to their own tastes) and Pineapple Orange Smoothies. Class is vegetarian and dairy-free. Cost of the class includes 1 child and 1 parent.

Global Cuisine Series
Indian: Go global with your GF cooking! We’ll journey to India and prepare traditional dishes such as Chana Masala, Saag Paneer, Red Lentil Dal and Aloo Gobhi. This class is vegetarian, dairy-free and egg-free.

Mexican Fusion: This class explores Mexican cooking techniques with added East Asian flair. Join the GF Warrior as she makes flavor-bursting recipes such as The Warrior’s Guacamole, Pineapple Cilantro Salsa, Enchiladas Mole, Aduki Bean and Basmati Rice Tacos or Sesame Lime Halibut Tacos, Coconut Flan.

Vegetarian Thai: Diversify your GF cooking and learn how to make easy dishes with authentic Thai techniques and flavors. We’ll make Spring Rolls, Green Curry and Traditional Pad Thai.

Baking Series
Introduction to GF Baking: GF baking is dynamic, flavorful and fun! With grain, nut and legume-based flours at your disposal, GF baked goods can be more multidimensional than wheat flour products. In this class you’ll learn how to experiment with these ingredients and substitute effectively for wheat flour in cake, sweet bread, cookie and flatbread recipes. We’ll bake delicious recipes such as Blueberry Lemon Cornbread, Jewish Apple Cake and Quick and Fabulous Flatbread.

Vegan GF Baking: Dairy and egg allergies are quite common with gluten allergies. Egg-free and dairy-free baking adds another layer of difficulty to GF baking but deliciousness can be achieved by making appropriate substitutions. In this class you will learn what foods can be substituted for eggs and dairy in scrumptious recipes like Peanut Butter Chocolate Chip Walnut Cookies, Blueberry Banana Flax Muffins and Zucchini Raisin Walnut Bread.

Holiday Cooking
Holiday Baking: There’s no need to opt out of holiday baking simply because your GF. Gluten-free holiday desserts might sound tricky to pull off, but the right substitutions and recipes make it easy. In this class you’ll make tasty and scrumptious holiday treats like Pumpkin Oatmeal Spice Cookies, Old Fashioned Gingerbread with Homemade Whipped Cream and the Warrior's Jewish Apple Cake.

Thanksgiving:In this class you’ll learn how to prepare dishes that the whole family will enjoy. Dishes in this class showcase inventive twists on Thanksgiving favorites including: Quinoa and Cranberry Stuffing, Apple, Cheddar and Cashew Stuffed Delicata Squashes with Homemade Gravy, Rainbow Roasted Root Vegetables and Pumpkin Cornbread or Pumpkin Cheesecake.

Jewish Cooking: Learn how to prepare traditional dishes you see on the table during the Jewish Holidays. Rice Noodle Kugel, Sweet Potato Latkes, and Almond Anise Cookies.

Meet Genevieve, the Gluten-free Warrior


Genevieve Sherrow, MS, CN, is Founder and Owner of Gluten-free Warrior, a gluten-free consulting company based in Philadelphia. The company originated as the gluten-free cookbook, Gluten-free Warrior, authored by Sherrow, and now provides culinary education, nutritional counseling, catering, private chef services and consulting to food industry professionals. Genevieve has taught dozens of gluten-free nutrition and cooking workshops in Philadelphia, Maryland, DC and Virginia at Whole Foods Market stores, Audrey Claire COOK, La Cucina at the Reading Terminal Market, Essene Natural Foods Market and the Mount Airy Learning Tree. She is an Adjunct Faculty Member in the Culinary Arts and Food Science Program at Drexel University. Genevieve holds a Master of Science in Nutrition from Bastyr University, known one of the world’s leading centers in the natural health sciences. She has been living gluten-free for 6 years.
