Culinary Nutrition Education Programs


Our classes are informative, inspiring and fun! We teach you how to prepare tasty, delicious and nutritious GF meals the whole foods way. Our food and teaching style has been described as accessible, substantial, wholesome and dynamic. We use high quality, organic, locally sourced whole food ingredients. Classes are suitable for any individual pursuing a gluten-free life and for those with general interest in whole foods and plant-based cooking. 

All classes are approximately 2 hours in length, but can be modified based on your venue and participants' needs. We teach in a variety of venues including groceries, health care institutions, schools, restaurants, private homes, parties and conferences. Foundation Series

Quick and Easy: For beginners, these dishes can be prepared in less than 30 minutes. Class also emphasizes planning for leftovers. We’ll prepare Habana Rice and Beans, Thai Chili Lime Chicken and Leek and Shittake Mushroom Frittata.

On a Dime: We’ll make satisfying whole foods meals for under $20 including:
Eat the Rainbow Veggie Chili, Chickpea Vegetable Curry and Stir-fry of Carrot, Celery, Zucchini and Mushroom with Toasted Millet Salad, Asian-Style Breakfast Rice. Vegetarian, no eggs or dairy. 


Brunch: In this class we’ll make nourishing whole grain breakfast dishes that are sure to jump start your day. Blueberry Lemon Corn Muffins, Nutty Millet Porridge with Seasonal Fruit, 
Hearty Buckwheat Waffles with Maple Butter, Scallion, Cashew and Nori Egg Scramble.

Whole Grains: GF whole grains can pack significant nutrition into your diet. Learn how to cook with nutritionally strong gluten-free whole grains such as quinoa, millet and buckwheat for breakfast, lunch and dinner. Cheesy Polenta Triangles, Confetti Quinoa with Nori, Sesame and Raw Cashews, Toasted Buckwheat with Rainbow Root Vegetables, Mushroom Millet Risotto.

On-the-Go: Finding healthy gluten-free food on-the-go can be challenging, especially when traveling. In this fun and informative class, you’ll learn how to create tasty, nutritious and portable breakfasts and snacks: Pumpkin Spice Bars, Carrot Raisin Breakfast Muffins, Triple Nut Granola Bars and Quinoa Breakfast Cookies.

Family Breakfast:
We know that breakfast is the most important meal of the day and it can be the most challenging for those on a gluten-free diet. In this class you and your child will learn how to prepare tasty and delicious morning dishes such as: Banana Berry Muffins, Individual Veggie Frittatas (which children can customize to their own tastes) and Pineapple Orange Smoothies. Class is vegetarian and dairy-free.

Baking Series

Introduction: Learn how to bake flavorful, scrumptious and perfectly-textured sweet and savory products. Blueberry Lemon Cornbread, Jewish Apple Cake and Quick and Fabulous Flatbread. Tactics involved with baking without dairy, eggs and refined sugars will also be discussed.

Vegan GF Baking: In this class you'll learn how to make appropriate substitutions for dairy, eggs and refined sugars. Recipes include: Peanut Butter Chocolate Chip Walnut Cookies, Blueberry Banana Flax Muffins and Zucchini Raisin Walnut Bread.
Crusts for Pies, Tarts and Quiche: Learn how to prepare mouthwatering, tasty, flaky gluten-free crusts for pies, tarts and quiche. We’ll prepare a Perfect Pumpkin Pie with Homemade Pumpkin Puree, Fresh Berry Fruit Tarts, Gruyere, Leek and Wild Mushroom Quiche and Traditional Apple Pie with Crumb Topping.

Savory Bread Making: Learn how to combine gluten-free whole grain flours and starches to create tasty, perfectly textured breads. Join us for Margherita Pizza, Grilled Cheese on Fabulous Sandwich Bread, Dinner Rolls, Whole Grain Flatbread and Protein-Powered Paleo Bread.


Holiday Cooking and Entertaining

Baking: Gluten-free holiday desserts might sound tricky to pull off, but the right substitutions and recipes make it easy. In this class you’ll make tasty and scrumptious holiday treats like Vegan Pumpkin Oatmeal Spice Cookies, Old Fashioned Gingerbread with Homemade Whipped Cream and the Warrior's Jewish Apple Cake.

Thanksgiving Sides: Thanksgiving means food and lots of it. In this class, we'll prepare classic dishes with inventive twists that the whole family will enjoy. Apple Raisin Walnut Stuffing, Quinoa and Roasted Vegetable Stuffed Delicata Squashes with Homemade Gravy, Ginger Cranberry Sauce and Pumpkin Pie with a classic GF Crust.

Jewish Cooking: Learn how to prepare traditional dishes you see on the table during the Jewish Holidays. Rice Noodle Kugel, Sweet Potato Latkes, and Almond Anise Cookies.


Global Cuisine  

Indian: Go global with your GF cooking! We’ll journey to India and prepare traditional dishes such as Chana Masala, Saag Paneer, Red Lentil Dal and Aloo Gobhi. This class is vegetarian, dairy-free and egg-free.

Mexican Fusion: This class explores Mexican cooking techniques with added East Asian flair. Join the GF Warrior as she makes flavor-bursting recipes such as The Warrior’s Guacamole, Pineapple Cilantro Salsa, Enchiladas Mole, Aduki Bean and Basmati Rice Tacos or Sesame Lime Halibut Tacos, Coconut Flan.

Vegetarian Thai: Diversify your GF cooking and learn how to make easy dishes with authentic Thai techniques and flavors. We’ll make Spring Rolls, Green Curry and Traditional Pad Thai

  1. The grains of Basmati rice of Amira are long and slender and they are always consistent in quality. When cooked they emit a great flavour too. Amira is one of the major producers of speciality products.
